Hello, I'm Chef Sarah Tressler, an application specialist here at Blodgett ovens, and I'd like to give you a few cooking tips for your SHO oven. First thing, I have some frozen French fries here on our fry pan. One tip is to evenly distribute your French fries across the whole pan and maybe even giving a little less in the center just to get a nice, even bake all the way across. Next, we're going to do some roasted Idaho potatoes. These just have a little olive oil, salt, and pepper. And then a frozen mac and cheese. For this, I would actually suggest using the high-speed fan because none of these are very delicate products and it will actually help decrease the bake time. Now that we have our other items in the oven cooking, I'd like to talk to you a little bit about baking in the SHO oven. Right here, I just have some frozen sugar cookies and I have also here some muffins. Suggestion with your sugar cookies is I would start them out on a low fan, allow them to spread, and then when they've spread enough, you switch it over to the high-speed fan to finish the cook without lengthening the bake time or drying out the product. With the muffins, it's a similar idea. I would start on a low fan, allow them to gently rise and form a skin, and then once they've set, I would switch it to high fan so that way they won't dry out on the inside and lengthen your bake time. Another note is that once they've set, if you switch it over to high fan, it'll quicken it so it won't have as much opportunity to lean. So, for roasting in your convection oven, I have a couple tips for you. One, I would take a hotel pan and fill it about halfway full of water and put it on the bottom rack of your oven. This will help reduce shrinkage. One thing to remember, though, is never place anything directly onto the floor or the bottom of the oven. This will restrict air flow and create an undesirable bake. For our roast, here I have a roast placed on a roasting rack within a pan and that's so I can catch the juices so we can create gravy afterwards. I'd just like to give you a quick, little recap of our cooking in the SHO oven. We did the roasted potatoes, the French fries, the sugar cookies, and our muffins. One thing that I'd really like you to remember is to make use of both of those fan speeds. They will help you out in the long run. Thank you very much and have a great day!

Double deck convection ovens like this one will ship separately. You will need to un-crate each oven and then stack one on top of the other as part of the installation process. Consult your installation manual for details specific to the oven you ordered.
What is the difference between comparable Blodgett BDO and SHO series ovens?
While Blodgett BDO and SHO series units of similar configuration may appear nearly identical at first glance, there are subtle differences present that should be considered before purchasing. For gas units, BTU ratings may vary between BDO and SHO units, so be sure to read the specs carefully when comparing the two. Also, control panel configurations differ between the two series. Control panel diagrams for each can be found in their respective manuals for reference. Finally, warranty terms are different for each series, with the BDO units having a longer parts warranty than SHO units.

Cooking your restaurant's most famous ribs, braised steaks, chicken, and bread will never be easier than with this Blodgett SHO-100-E double deck electric convection oven! Boasting a sturdy iron frame with a stainless steel top and 6" adjustable legs, this oven is sure to provide functionality to your kitchen while operating smoothly. This double deck oven provides you with twice the production capacity in the same footprint as a single deck unit.

Thanks to each compartment's two speed fan and 1/2 hp blower motor, this convection oven efficiently recirculates heated air through its interior compartment, which reduces energy consumption and increases performance. This system offers a cost-effective way of cooking your product at a lower temperature for a shorter amount of time, allowing you to get food to the tables faster.

The chrome-plated door handle provides a comfortable grip when opening and closing the dependent stainless steel doors, which are tightly secured to the frame with triple-mounted door hinge pins. The interior features five chrome-plated racks that can be configured into eleven rack positions with a minimum of 1 5/8" spacing to ensure that you are getting the most out of your oven space. This oven also has the capacity to hold up to (5) 18" x 26" standard full size baking pans per compartment. A 14 gauge double-sided porcelainized baking compartment liner allows for easy clean up of your unit. As an added benefit, the interior is illuminated, giving you the ability to check on your product without opening the doors and letting excess heat escape.

Each deck has three tubular heaters that are controlled by an electromechanical thermostat with a temperature range from 200 - 500 degrees Fahrenheit, which gives you the ability to prepare a wide variety of products. For safety, the blower motor has an automated thermal overload protection mechanism and a control area cooling fan. It requires a 208V, 3 phase electrical connection.
