I was in a butcher shop early in my life. Our family business was a butcher shop. My name is Charlie and I was a butcher. I was looking for this process of how to cook a prime rib and went to the food shows, which I was a butcher and I never went to food shows, and stumbled upon chefs with Alto-Shaam and he helped me and told me the theory of cook-and-hold and how I can actually tenderize a piece of meat overnight in an oven. We cook USDA choice top brown and we cook it overnight. We put it in the oven at 4 o’clock in the afternoon the night before the show starts. We do the electronic settings of 250 cook, 100 degree probe, and 140 hold, and we press the start button. I come in in the morning and here the lights are flashing, everything looks good, and my piece of meat cooked overnight and finished at 131 degrees. Amazing! I have restaurants now where I have 28 cavities and I cook every night in those cavities and all the proteins that I cook in those all finish within 1 degree. That’s pretty amazing stuff.

    The Alto-Shaam 1000SK III is a workhorse of a smoker. We smoke around 100#+ of bacon, brisket, belly, chicken and fish every week in it. We're also able to utilize it as an oven and run a braise in it over night. The cabinet holds heat and smoke so well we never have to worry and the probe option hits the mark every time. Being able to hold food allows for us not to worry about food drying out or dropping below 140. You'll only need one in your life time but having two would be so much fun!
