A spiral mixer is an ideal piece of equipment for your bakery, pizzeria, or other foodservice establishment that produces large amounts of dough on a daily basis. These items have spiral-shaped agitators that remain stationary while the bowls revolve around them. Plus, this style of mixer will prepare dough much more quickly than its planetary counterpart.
Almost every spiral mixer comes with two speeds that enable bakers to properly mix dough. The lower speed is used to mix all ingredients into a ball, and the higher speed is what enables the dough to develop its proper gluten structure. Additionally, each commercial spiral mixer has a hook that kneads only a portion of the whole dough mass at a given time, which keeps friction heat low and prevents contents from becoming too tough.
