Portion control has been an often talked about topic in the food service industry for as long as I can remember. Every operator knows they should practice good portion control; every chain account that I’ve ever been in has procedures in place to make sure that things are getting measured. And yet so many operators still sacrifice consistency and throw their money away by not having a good portion control game plan in place for their enterprise. Hi, I’m Steve Ziegler, product expert at the WEBstaurant Store. Let me show you a few examples of how portion control can affect your business. The first thing I’d like to discuss is consistency. Not only can one person’s estimate of the right amount vary widely, but the problem only gets worse when you’re talking about more than one employee. For example, if I go into your sandwich shop and I receive this sandwich made by Joe, I’m probably going to be pretty happy. If later on I go in and get this sandwich made by Jack, not only am I going to be unhappy, but I’m probably going to complain about it. And the sad thing is, if this meat had been split evenly between these two sandwiches by using a scale, I probably would have been a very happy customer. So portion control is an important part of customer satisfaction. Next, and even more importantly, by not having portion control in place, you’re slowly robbing yourself blind. Here, let me show you. You see these two sandwiches being prepared here, I measured this one with 3 ounces of ham. This one I just eyeballed, and it looks right, doesn’t it? I made lots of sandwiches in my time and I’m a good estimator. But just in case, let’s go ahead and measure the meat on this sandwich. Well, I was a little bit off, that’s 4 ounces right there. Even though it looked the same, it’s very easy to be off by a good bit. Three to four ounces, that’s one ounce off, that’s 1/16th of a pound, that ham cost me five dollars a pound, now let’s think about this a little more carefully. Now 1/16th of a pound times $5 a pound, were only losing $0.31 cents a sandwich. But I serve 30 sandwiches a day 6 days a week, 52 weeks a year, which brings me to the fact that by the end of the year I have managed to lose $2,901.60. That is money that I’ve worked for, now I’ll never recoup. But if you’re a better estimator than me, let’s say you’re only off by an 1/8th of an ounce. With this same ham, you’re only going to lose $362.70. Which is just fine, because your kids really didn’t want that PlayStation that badly anyhow. Every chain restaurant has a portion control program in place because they’ve studied it, and they know it’s worth the effort.     This is a decent quality scale for the low cost. We use it for portioning pizza dough balls. I did have it get stuck but with a quick removal of the side panel was able to reattach the spring and it has work perfectly ever since.

    I like the old school look of this scale. I did have problems with the tray on top falling off because the nuts would fall off. Just make sure that you get them tight the 1st time.

    I bought one and it lasted around 3 months and it started to become out of alignment. I opened it up and adjusted the tension inside. That worked for a short time, but it just is not well made. You get what you pay for. I realized this several weeks ago after buying a second one. That one lasted just 3 weeks before it went wacky. I learned my lesson.

    Worked well for a few months, then the screws that hold the platform in place broke. We were still able to use the scale for about 9 months until the spring that calibrates the platform broke. For the price, it's not a long-term investment, and gets the job done for a short period of time.

    We purchased two as scales to use prior to the digital scale. Unfortunately the trays keep falling off. The bolts are so small, it makes for a reattaching nightmare.

    Exactly what we needed for our by-the-pound buffet; accurate, easy to calibrate, simple design. I prefer the mechanical over the digital because it's always ready to work! Assembly involved putting the top plate on...piece of cake.

    I hate to leave bad reviews but I feel like the good customers of Webstaurant deserve to know how poorly these performed for our Deli. These scales were purchased in October and all five units had broken by April. The spring mechanism just simply stops working. These are the first and only too-cheap-to-be-worth-it product we have encountered on Webstaurant.

    This scale is not for abusiness it says on it not for legal for trade on it and It only goes to 32 oz or 900g but does the job. I do notice every now and them I have to turn the screw under the top of scale to bring it back to the zero but that may be normal for this type of scale. It does say not legal for trade only estimated purpose only so keep this in mind if it's for business.

    Got two of these a month ago. The first one broke within 2 weeks of use. The small springs inside came loose and out. I called Webstaurant. The immediately shipped a replacement free of cost. I will not buy this item again.

    Ah my scale, I can't believe that I have owned this since 2011. It sits in a place of honor in my kitchen because it is beautiful, functional and used often. Couldn't live without it!

    This scale does an OK. job. The biggest thing you have to watch out for is the screws backing out. Check them every couple of days and you will be OK. The scale works good otherwise.

    This is a good scale for my household needs: postage, diet portions, weighing out snack bags evenly, etc. It looks good, seems accurate, and it's repeatable. (ie, take the bag off, weigh it again, get same results). It does take up a bit more cupboard space than I'd like, but I knew what I was getting, so that's on me. : ) It's heavy weight, so not likely to tip over, even with heavier objects, and it feels solid. It allows you to reset the zero after you place the plate on it, so you can just weigh the food, too. The dial is easy to read, even for my old eyes, and I only wish I'd had it long ago.

    Ordered 5 of these. They were ok to start with, but you get what you pay for. One has stopped working after a week, and with the others won't stay stay zeroed, you zero it out put something on, take it off and you have to re-zero again. My staff refuses to use them now, so I guess it's back to the more expensive ones. Was worth a try though.
