This warmer's innovative CVAP technology gives you precise control over both the temperature and the moisture level inside the unit via two key control sets, ensuring that crisp foods stay crisp, moist foods stay moist, and everything in between. Its narrow design gives you the same pan capacity as a standard model in a smaller footprint, and the drawer can hold up to 20lbs. of food. A radial fan helps ensure consistent temperature and moisture levels in applications where the drawer is opened frequently, and the warmer's insulated, stainless steel construction is sure to provide years of reliable use.
