Winston Cvap Holding Cabinet

Have a new Winston Cvap holding cabinet? Here's everything you need to know in order to begin using it. First, be sure to remove all tape from inside the cabinet. The rails are adjustable for any configuration. The most common configuration is to start from the bottom and install a rack in every other slot. With every other slot filled with a rack, you can utilize 1 standard sheet pan per shelf, (2) 2" hotel pans per shelf, or (1) 2" hotel pan per shelf using the lip of the pan. To fill the unit with water, you need to fill a container with 2.5 gal. (9.46 liters) of water. Once filled, you can begin pouring the water into the bottom of the unit. Make sure the water temp probe is fully submerged before cooking. Begin the programming process by adjusting your food temperature dial. This dial will directly control your water temperature, thus controlling the internal temperature within your food. You can then adjust your food texture dial on the right hand side. The values on this dial have a plus sign (+) which correlates to the degree of heat above your water temperature. For soft foods, begin with 150 degrees for food temperature and 0 to 5 degrees for food texture. For a general hold setting, begin with 150 degrees for food temperature and add 30 degrees to food texture. For crisp foods, place the food temperature between 100 and 130 degrees, and then add 40 to 80 degrees to the food texture. Once your desired temperature is set, you can adjust the default temperatures on your control board. There are 4 settings to choose from. There's EF, which is known as evaporator Fahrenheit or water temperature. There's EC for evaporator Celsius. There's AF for air Fahrenheit, which is also known as the total temperature inside your cabinet. Finally, there's AC for air Celsius. To adjust the temperature read out, press and hold the F / C button for 3 seconds and toggle between the 4 modes. To turn off your unit, toggle the power switch on the upper left hand side of the machine. If you need to drain the water from the unit, you need to place a 4" deep hotel pan under the drain cap at the bottom of the unit. After you unscrew the cap, place it inside the door frame. You may need more than one pan to catch the water depending on how much water is inside the unit. To remove the rails inside your unit, grab a rail, lift up, and pull out from each slot. In order to remove multiple rails, start from the bottom rail, keep your palm open, lift up your hand, and catch all of the rails at once. You can then pull them all out of the unit. If you need to remove the flue rack, grab the inside of the flue, lift up, and pull it out. To clean the unit, use water, soap, and a non-scratch pad. You should scrub the inside of your evaporator pan, interior walls, the interior door, rails, and the flues. Don't forget to clean your water temp probe while you have all of your supplies out! When cleaning, don't use a degreaser as it may contain chemicals that are harmful to your Cvap. After cleaning, unscrew the drain cap, place a pan underneath the drain and rinse the inside of the unit with fresh water. Once you have rinsed, wipe the unit down with a dry towel. Be sure to clean inside the door gaskets and remove any food particles from the gasket. With these instructions and tips, your Cvap will work more efficiently and last longer!

Winston CVAP: Replacing a Door Gasket

In this video, we will explain how to install the door gasket on your Winston UHB-8503 holding cabinet. You will need the following tools to complete this installation: a Phillips head screwdriver, nut driver 7/16", and PS2962 door gasket. Before beginning the installation, be sure to unplug the unit from its' power source. First remove the door from the hinges. Open the door to a 90 degree angle, then lift up on the bottom of the door to free it from the hinges. You'll want to balance the door with your off hand to ensure it doesn't get dropped during this process. Before the gasket can be removed, you must first uninstall the side hinges. Using a Phillips head screwdriver and a 7/16" nut driver, loosen the screws and detach the hinge assembly. Finally, flip the door over so that the gasket is facing up and remove the gasket by pulling it out of the groove of the door. Install the new gasket by lining up the groove in the gasket with the groove in the door. Starting in one of the four corners, press the gasket into the door groove, then slide your finger along the ridge of the gasket to ensure a tight fit. Repeat this process until the gasket is completely installed. Flip the door over, then begin reinstalling the hinges. You will notice that both hinges are not identical. Begin by installing the bottom hinge, which looks like the hinge shown above. Then install the top hinge. Finally, coming in at a 90 degree angle, align the hinges on the door with the hinges on the unit and slide the door into place.
