The White Glove agent will call to schedule a delivery appointment within a four hour window, which gives you the flexibility to work around your busy schedule and to prepare the space where your item will be placed. Upon delivery, trained professionals will unload your item from the truck, bring it into the room of choice, unpack the item and remove all packaging debris from the premises.

Please note that White Glove delivery will typically add 5 - 7 business days to your order's transit, and only includes 30 minutes of on-site time. If on-site time beyond 30 minutes is required, you may be responsible for additional fees. Additionally, this service does not include set-up of the items being delivered.

Winston Cvap Thermalizer

Have a new Winston CVAP Thermalizer? Here's everything you need to know in order to begin using it. First, be sure to remove all tape from inside the cabinet. The rails are adjustable for any configuration. The most common configuration is to start from the bottom and install a rack in every other slot. With every other slot filled with a rack, you can utilize 1 standard sheet pan per shelf, (2) 2" hotel pans per shelf, or (1) 2" hotel pan per shelf using the lip of the pan. To fill the unit with water, you need to fill a container with 2.5 gal. (9.46 liters) of water. Once filled, you can begin pouring the water into the bottom of the unit. Make sure the water temp probe is fully submerged before cooking. The Winston Cvap Thermalizer comes with 8 preprogrammed channels. You can reference the pre-programmed channels and cooking guidelines in your owner’s manual. To start a preprogrammed channel, press the desired channel and let it preheat. When the display reads “load”, place the product inside the cabinet, set the time using the arrow keys, and press and hold the start and stop key. To customize a channel, start in the “idle” position and press and hold the start and stop button, and wait for the display to read “prog” for program. Then, press the desired channel that you would like to customize. When the channel is lit, use the up and down arrow keys to adjust your food temperature, which is also known as your water temperature. To adjust your food texture, otherwise known as air temperature or the total temperature inside your cabinet, use the up and down arrow keys. 350 degrees Fahrenheit is the maximum temperature. To set your cook time for how long you would like to cook inside the unit, use the up and down arrow keys. After the completion of the cook cycle, you have the option of going into a hold cycle. To set the hold settings, press the channel key again until it “ehld” displays. Again, use your up and down arrow keys to adjust the hold settings. When finished, press and hold the start and stop button to save your settings. At any point, you might want to check the temperature of your water or air. To check the temperatures, press the HACCP key once to display E, which is your water temperature. The letter D is the difference between your water and air and A is the total temperature inside your unit. When you have finished using your thermalizer for the day, you have the option of setting a delay timer on your unit, so it will come on automatically in the morning. To program the delay timer, make sure the display reads “idle” before you press and hold the up arrow key. The unit should display “dlay” for delay. Select the desired channel and adjust the delay time by using the up and down arrow keys. Then, press the start and stop key to save your settings. For example, if you set your delay for 11 hours at 8 p.m., your unit will come on at 7 a.m. the next day. You can cancel the delay timer at any point by pressing and holding the start and stop key until the unit says “idle” on the display. To turn off your unit, toggle the power switch on the upper left hand side of the machine. If you need to drain the water from the unit, you need to place a 4" deep hotel pan under the drain cap at the bottom of the unit. After you unscrew the cap, place it inside the door frame. You may need more than one pan to catch the water depending on how much water is inside the unit. To remove the rails inside your unit, grab a rail, lift up, and pull out from each slot. In order to remove multiple rails, start from the bottom rail, keep your palm open, lift up your hand, and catch all of the rails at once. You can then pull them all out of the unit. If you need to remove the flue rack, grab the inside of the flue, lift up, and pull it out. To clean the unit, use water, soap, and a non-scratch pad. You should scrub the inside of your evaporator pan, interior walls, the interior door, rails, and the flues. Don't forget to clean your water temp probe while you have all of your supplies out! When cleaning, don't use a degreaser as it may contain chemicals that are harmful to your CVAP. After cleaning, unscrew the drain cap, place a pan underneath the drain and rinse the inside of the unit with fresh water. Once you have rinsed, wipe the unit down with a dry towel. Be sure to clean inside the door gaskets and remove any food particles from the gasket. With these instructions and tips, your CVAP will work more efficiently and last longer!

Winston Cvap Cook and Hold

Be sure to remove all tape from inside of the cabinet. Installing racks- Cvap Cook & Hold Cabinet. The rails are adjustable for any configuration. The most common configuration is starting at the bottom and installing a rack in every other slot. This configuration will allow you to utilize one standard sheet pan per shelf, (2) 2” hotel pans per shelf, or (1) 2” hotel pan per shelf using the lip of the pan. Filling unit with water - Cvap Cook & Hold Cabinet. Pour 2 ½ gallons or 9.46 liters of water into the bottom of the cabinet. Make sure the water temp probe is fully submerged in water before cooking. Programming - Cvap Cook & Hold Cabinet. There are two settings that you can use to program the temperatures inside your unit: constant cook or high yield. Push the button to toggle through either one. Use the up and down arrow keys to program your doneness temperature which is your water temperature and internal food temperature. Your doneness settings range from 200 degrees Fahrenheit to 90 degrees Fahrenheit. To program your air temperature, also known as your browning, use the up and down arrow keys. The browning scale ranges from off to 10. The browning scale can be located to the right of your control, or in your owner’s manual. To adjust your cook times, use the up and down arrow keys to a desired time. There are cooking guidelines and suggestions found also in your owner’s manual. After you have set the cabinet to your desired temperature, your display will show preheat. When your unit reaches load on the display, you may now put product in. Press and hold the start and stop button for 3 seconds or until the timer starts. At any point, you may want to look at the temperature of your water or air. To do so, push the HACCP key once and it will display E which is water temperature, D which is the difference between your water and air, and A, for the total temperature inside your cabinet. To adjust your temperature read out from Fahrenheit to centigrade, press and hold the F / C button for 3 seconds, release, then push the button again to toggle between the two. You are ready to remove product from your cabinet when it displays sell. Remove your product and press and hold the start and stop key until it clears the sell message. If the unit is displaying ELEC, there is an interruption in the power supply or, the start and stop key was not pressed before turning off the unit. To clear this message, press and hold the start and stop key for 3 seconds. Turning off the unit - Cvap Cook & Hold Cabinet. To turn off the unit, switch the power button in the top left corner to off. Draining water from the unit - Cvap Cook & Hold Cabinet. Place a 4” deep hotel pan under the drain cap found at the bottom of the unit. Unscrew the cap, and place it inside the trough. You may need more than one pan depending on the amount of water inside the unit. Removing rails - Cvap Cook & Hold. To remove the rails, grab the middle, lift up, and pull out from each slot. To remove multiple rails, start from the bottom rail, keep your palm open, and lift up on each one as you go up, then pull out. This makes for quick and easy rail removal. Removing flues - Cvap Cook & Hold. Grab the inside of the flue, lift up, and pull out. Do this for both sides of the cabinet. Cleaning the inside - Cvap Cook & Hold. Using warm water, soap, and a non-scratch pad, wash the inside of your evaporator pan, interior walls, the rails, and your flues. Be sure to clean your water temp probe as well. Do not use a degreaser as it may contain chemicals that are harmful to your Cvap. After cleaning, unscrew the drain cap, place a pan underneath the drain, and rinse the inside of the unit with fresh water. Once you have rinsed, wipe the unit down with a dry towel. Be sure to clean inside the door gaskets and remove any food particles from the gasket. You can do this by running a damp cloth along the rubber lining. Using warm water, soap, and a non-scratch pad, clean the inside of the doors. After you have cleaned, be sure to wipe down the doors with a dry towel.
