How to Clean a Vollrath Deep Fryer

Now clean up on the deep fryer. You want to turn the fryer off. The baskets, those can go in the dishwasher, pot/pan sink, nothing special there. To clean these, you would remove the baskets. Take the fryer head off, and on the smaller units, this lifts up and out, and you would typically take a pot of some sort and a filter (there are several different types of filters). Some people just use something like this—not quite fine enough—put a nice mesh filter in there. Some people use cheesecloth. There’s another filter out there…I think it’s called Miroil clean, more like a silk almost if you felt it. It’s very fine. The more particulate you take out, the longer your grease will last. So, on the smaller units, you take that pot, strain it through here manually. Pick it up and just dump it through. Move this, then take this and dump it back in. You can take the pans there—pot/pan sink, dishwasher, what have you. Obviously yes, you’d like these cool. You still want to strain grease when it’s warm. You don’t want to let it get cold. It just gets too thick. Especially when you’re using solid shortening, you don’t want to let it get too cold. Warm grease just strains through a little easier. Now, when you take these wells to the sink and you bring them back, don’t assemble the fryer right away. You want to let them dry thoroughly, especially if you’re going to be washing down the heads. If you leave any water in there, and you pour your grease back in, next time you fire up your fryer that water’s going to spatter and pop and you’re going to get a lot of stuff going on. So if you’re cleaning these things, let them air dry thoroughly. Overnight’s really good. No need to fill them back up, especially if you’re using liquid shortening. It doesn’t matter. Let me back up a little bit. For this unit how to strain it, obviously we’ve got the valve. So we pull this forward, lift this up, drain it through. Take this, drain the valve, and strain it through. You would then put water in here, scrub that unit out. Drain the water out and then let it air dry again or wipe it down really well, and then refill that unit.

So what I have here today is I’ve got our 120V unit, 1800W, again the maximum you can have on the 120. We have our 220 units. This is the 3000W unit. This is the 2500W unit. As we talked yesterday about wattages and voltages, right now these are rated at 220, say that’s just a rating. They are proved to be higher, but they are rated at that. When they cycle off, in other words when they are not heating anymore, they’re up to temp, the light goes out. This unit, I added a little oil to it, you can see the light is on and this unit as well you can see the light is on. Thermostatically controlled, talking about what is the range of it. If they cycle off, you can come up and turn these just a little bit and you’ll see that if you turn it a little lower, the light cycles off, you turn it a little higher…so they’re pretty tight. Within a few degrees. It’s deep frying, not sous vide cooking. We’re not as worried about precise precise temperatures. This knob on the top, this is a thermal cutout. If you should have an event where this unit overheats, there’s a thermal cutout, a high limit switch that’ll pop. Simply take the cover, take it off, and inside there’s a button you push down and it resets it. Also, on the fryer head assembly we talked about yesterday, on the underside there’s a microswitch that if this were to be lifted off it’ll cut out as well. Because we can remove these from the body, if someone were to take this out and set it on a counter, you don’t want it to keep going so it turns off. Accessories that come with these that we talked about yesterday—our night cover comes with our larger units. It’s an option on the smaller units. These are the double baskets, but you can also get one large basket. You don’t have to use baskets if you have something that you want to free float in the grease you can do that , just take the basket out and use tongs or something to take them out—funnel cakes, the onion that you went over this morning. Then I’ll mention as well as an accessory when we’re talking about fryers. Our 71500 heat lamp, a full size pan, and a wire grate make a nice dump station. Set this up next to the fryer, I just don’t have a lot of space, you typically dump product in here to keep it warm. The grate keeps it up off the bottom out of the grease. So a nice item to consider along with fryers especially if they’re using these as this add on area. They’re probably not prepared with a dump station next to it because it is just an add-on so remember to follow up with a dump station. Again, we’re not looking to be the big fryer to serve the lunch crowd. We’re looking for this thing for specialty items. Things like French toast sticks where you want to keep delicate flavors separate—I could present that box a little nicer—keep delicate flavors separate. It does. Farm rich, yes. I developed these last week. This week I’m working on this type of stuff or even you know, like some donuts or something where you have a delicate flavor. You’re not going to be doing fish in here. You’re not going to be doing anything else. This is something that you can bring out for your brunch. Put something in there. Why don’t I just cook one of those up for you? Just to show or another item is like sweet potato fries or something specialty. It’s a solution.

    Amazing donuts deal countertop considering chicken Cayenne capacity burger better

    Amazing. Paired this item with the Vollrath 40719 Cayenne 18" gas countertop griddle on a stainless steel table. Was skeptical to purchase at first considering I could not find many reviews online about this product. I thought that for the price it was an amazing deal, but sometimes that turns out to be disappointing. I was totally proven wrong. We have a restaurant with a seating capacity of 100 total, and we're easily able to use this fryer for appetizers, garnishes, and specials. Used it for frying fritters, vegetables, french fries, chicken, and even donuts. The recovery time is better than expected. I would not recommend this for a burger joint or an operation with a menu that is more than 25% fried foods, but if you're looking to just have fun, you'll love this piece of equipment!
