Metro Q556EG3 MetroMax Q Open Grid Shelf Cart 48" x 24" x 69"
The MetroMax Q shelves are the best shelving units that I have ever used. The Microban treatment makes them perfect for storing dishes and glassware. They are very pricy, but worth the money.

These are very nice to have. During a slow night, or when the dishes aren't in use. Keep them covered up, its more sanitary. And when the health inspector comes he'll be telling you you're smart.

MetroMax Q2142SM Shelving Solid Mat Overlay 21" x 42"
I love this mat for the prevention of potential spills! Usually a spill will result in having to remove everything from the shelving unit and a lot of time cleaning up the sticky mess. This mat will contain the spill and make it easier to deal with!!

This is a nice utility cart to have around the kitchen. Its great for breaking down at the end of the night. Each shelf is rated for 150 pounds so you dont have to worry about breaking anything.

Metro 1248C 12" x 48" Erecta Chrome Wire Shelf
Metro shelving is super! I use one of these at home as an equipment rack. It has, conservatively, at least 300 pounds of equipment on it - and the uprights are farther apart as the unit I'm using is 18x60. Use the real Metro uprights and plastic links - I tried cheaping out with some phony uprights and one of the links slipped. But otherwise... Works great and wears great too!
