How Portion Scales Can Help You Control Portion Sizes

How Portion Scales Can Help You Control Portion Sizes

Portion control has been an often talked about topic in the food service industry for as long as I can remember. Every operator knows they should practice good portion control; every chain account that I’ve ever been in has procedures in place to make sure that things are getting measured. And yet so many operators still sacrifice consistency and throw their money away by not having a good portion control game plan in place for their enterprise. Hi, I’m Steve Ziegler, product expert at the WEBstaurant Store. Let me show you a few examples of how portion control can affect your business. The first thing I’d like to discuss is consistency. Not only can one person’s estimate of the right amount vary widely, but the problem only gets worse when you’re talking about more than one employee. For example, if I go into your sandwich shop and I receive this sandwich made by Joe, I’m probably going to be pretty happy. If later on I go in and get this sandwich made by Jack, not only am I going to be unhappy, but I’m probably going to complain about it. And the sad thing is, if this meat had been split evenly between these two sandwiches by using a scale, I probably would have been a very happy customer. So portion control is an important part of customer satisfaction. Next, and even more importantly, by not having portion control in place, you’re slowly robbing yourself blind. Here, let me show you. You see these two sandwiches being prepared here, I measured this one with 3 ounces of ham. This one I just eyeballed, and it looks right, doesn’t it? I made lots of sandwiches in my time and I’m a good estimator. But just in case, let’s go ahead and measure the meat on this sandwich. Well, I was a little bit off, that’s 4 ounces right there. Even though it looked the same, it’s very easy to be off by a good bit. Three to four ounces, that’s one ounce off, that’s 1/16th of a pound, that ham cost me five dollars a pound, now let’s think about this a little more carefully. Now 1/16th of a pound times $5 a pound, were only losing $0.31 cents a sandwich. But I serve 30 sandwiches a day 6 days a week, 52 weeks a year, which brings me to the fact that by the end of the year I have managed to lose $2,901.60. That is money that I’ve worked for, now I’ll never recoup. But if you’re a better estimator than me, let’s say you’re only off by an 1/8th of an ounce. With this same ham, you’re only going to lose $362.70. Which is just fine, because your kids really didn’t want that PlayStation that badly anyhow. Every chain restaurant has a portion control program in place because they’ve studied it, and they know it’s worth the effort. So put that money in your pocket, show your staff this video, and begin your portion control program today.

Taylor TS Mechanical Portion Control Scales

Taylor TS Mechanical Portion Control Scales

The TS32, TS5, TS25, and TS50 Mechanical Portion Control Scales from Taylor offer portability, NSF approval, and reliability in a small and inexpensive package. Today I’m going to take a few moments to show you some of the basic features, and the initial setup of these scales. When your Taylor mechanical scale arrives at your door, you’re going to want to let it come up to your indoor room temperature. Especially if it is hot or cold outside, and this is because these things are spring operated and springs change their shape with extreme heat or cold. When it is up to room temperature, the first thing you’ll do is align your rotating dial so the zero graduation sits right inside this triangular notch in the middle of the dial. Once it’s there, you’re going to take a weight (I’m just going to use some Regal sea salt) and place it on, let it come to a rest, take it off, and repeat this three times. Now that we’ve done that, we can look to see if this is precisely at zero. I can see it’s just a little bit off, so what I’m going to do is turn the unit around. You can see there is a brass knob there that you can turn back and forth in order to precisely tune your needle to zero. I’m going to do that right there, and there we have it! Now I’d like to show you the tear feature utilizing the rotating dial. The first thing we’ll do is put our container on the platform. You can see how the needles moved. I’m going to rotate the dial so zero lines up exactly with the needle. Next thing I’ll do is put my product in the container; in this case I have some tomatoes. Now you can see we have an accurate reading of just the tomatoes.

We use this portion scale daily and have no issues thus far. It was definitely worth the money. Initially thought it may not work well due to the low cost, but it's sure worth every penny!

This scale is garbage. One was defective and require immediate replacement. Other two I've had quickly became inaccurate and will not hold zero. Just spend a bit more and get a real scale, rather than this garbage.

Thank you for your feedback on this scale. We wish it would have better suited your needs. We were happy to make sure you were credited for the faulty units.

I use this scale everyday to weigh out my hand pressed burgers. It's easy to read, I also use a paper dish on top and just adjust the dial. The scale platform is not removable.

from H & L on the Hudson Posted on

Scale worked fine but too a fall off my table top and now doesn't work. The spring in it got all messed up. I can't really blame the manufacturer too much, these things happen

    from FITfoodNJ Posted on

This scale is an alright buy if you don't need to weigh many things throughout the day. With the amount of workload we placed on it, it unfortunately didn't hold up tremendously well. Though for smaller applications, I'm sure it is great.

from Irish Bred Pub Posted on

We bought this Tiny scale to weigh pizza dough. It lasted a day in our kitchen. Did not hold up well. The needle gives inconsistent reads on the same weight. You get a different measurement each time.

    from DeNunzios Posted on

Thank you for the review, Michael! We're sorry these have made issues for you. It sounds like they may need to be calibrated. A Customer Solutions Representative will contact you shortly with the instructions for how to do this.

This scale is very small and won't work for some applications but it's perfect for us. We use to as quality control to weigh out portion sizes for salads and sandwiches.

This scale is small, it doesn't take up much room at all. Accurate weights. I use it for portion control for my nachos and does a fine job.

Bought this scale for weighing sliced meat products that we sell at the restaurant. Does what it says it will. Purchased the patty papers to go with it.

from Chicago's Style 278 Posted on

Smaller than I expected. "Compact" is in the description but these are really small BUT still pack a punch, weighing up to 32 oz. which is great for most of our uses!!

from YMCA Camp Ockanickon, Inc. Posted on

This scale is a joke , the number are small that you cant even see them , its not restaurant quilty at all , i gave it to my kids to play with , the scale itself very very small , not happy with it

Measure all of your ingredients exactly with the Taylor Compact portion scale. We use this mainly for weighing out hand made burger patties which provides accurate and consistent measurements.

We have a couple of these Taylor scales in our kitchen as well as a couple of the digital TE10FT units. I tend to like the digital better because it's easier to clean and seems like it doesn't have to be calibrated as often.

This scale lasted less than 6 months before breaking. Don't waste your money.Buy a higher quality item and save your self the hassle of trying to figure out how to replace it on warranty.

Our employees like using this scale over the digital one. Its sturdy and last a few years, doesn't take up a lot of counter space, so far we have purchased lots of these through out the years we have three restaurants and we love these scales!

from Spokes II Inc. Posted on

Purchased this scale to use as a backup for our digital one, So far we haven't had to use it but inexpensive insurance is nice to have.

    from Bongiornos Pizzeria Posted on

These scales are the perfect size for our small store. The calibration adjustment is in the back under the pedestal. Before ordering, I was worried it might be hard to access but it works fine.

This is a great little scale. It doesn't take much room and gets the job done. Taylor is a good name in scales and this measures up.

    from Sbarro Pizzeria Posted on

The compact design makes it easy to transport without taking up much space. It is accurate and easy to clean. Perfect little space saving tool.

    from Chef Stef Posted on

All you need for your basic scale in a kitchen. As long as you are not doing any crazy measuring, this is all that is needed!!

from The Heights Casino Posted on

This little scale has lasted us longer than all the other scales we've bought. I think because it's not bulking, and employees don't drop it, and if they do, since it's not heavy, it hasn't broke. We have 3 of these and we portion everything we can. For example: 800 lbs. of ground meat per week for burger ranging 5 oz. to 10 oz.,; 180 lbs. roast beef; 40 lbs. ham; meatballs 3 0z. size about 60 lbs.; and many more uses.

    from Lee's Diner Posted on

This Is a very good scale for the money. Although it is a little smaller than I thought it would be, I would maybe think about a bigger one.

from Harts Repair Service. LLC Posted on

Good quality, inexpensive portion control scale. I've recently started making healthier food choices, so i'm very excited about this. I'm also a baking enthusiast and no longer have to pass on excellent recipes that lists ingredients by weights. Calibration is super simple and the scale seems to work great. It looks cute too.

    from Home cook Posted on

These scales are relatively inexpensive and good for quick portioning. We have one we use exclusively for portioning fish and another one we use for fresh pasta.

I bought this so that we could weigh burritos and show customers how much their burritos weighed. I haven't used it like that, but it has come in handy training employees.

    from Twisted Tortilla Posted on

I was very pleased with this scale for the price. It is simple, but very accurate. The smaller size allows us to leave it on the counter without taking up much space.

    from white spot Posted on

I find this much easier and faster thatn the electronic scale, nice that is stays on. easy to calibrate to whatever you are using to hold food while you are weighing. Not very durable - a pretty lightweight scale.

from PS Shooters, LLC Posted on

Nice product for the price. Can't beat it. We portion everything on this. We will be ordering more for our ice cream section when we add it.

from Irvin's On main Posted on

First, the name Taylor tells you it's quality! And it is. This scale is smaller than its description, 5-5/8W x 4-1/2D x 6H, not 12-1/2W x 10D x 7H. Its platform is 4-1/2W x 4D. I ordered it, afraid it would be too big sitting on my counter. But, much to my relief, it's just the right size. Its description is wrong. There is a slight tilt to the dial, making it a bit easier to read when sitting on my counter. I'm 6 ft-3 in and could wish for more tilt to the dial. But the dial is large, easy to read, and a pleasure to use. I'm enjoying it!
