  About this filter

  A 1-way pump will pump in only one direction: back into the fryer. To get the oil out of the fryer with a drain, you just open the drain and pump the filtered oil back into the fryer.
  
  A 2-way pump will work in both directions: out of, and back into the fryer. It will first pump in one direction to suck the oil out of the fryer, and then pump in the opposite direction to put the filtered oil back into the fryer.
