This InterMetro C539-CFS-4 full-size
insulated holding/proofing cabinet
provides maximum control, convenience,
and usability. You'll save energy thanks to
its patent-pending insulation technology. It
keeps the heat in, and provides a cool-
touch exterior.
There are three
distinct modules available: combination,
holding, and proofing. Each module
features an easy-to-read digital
thermometer, recessed control dials, and
power indicator lights. The combination
module allows you to switch instantly
between holding and proofing, and has
separate controls for temperature and
humidity levels. The holding module
features analog temperature control and
passive humidity generation. The proofing
module has individual analog temperature
and humidity controls.
Because
the C539-CFS-4 prioritizes heat generation
over humidity generation, food will stay at
the desired temperature, enhancing food
safety.
The C539-CFS-4 features
a solid, fully insulated door.
The
C539-CFS-4 has fixed wire slides spaced
in 3" increments, and can hold 18" x 26"
sheet pans, and 12" x 20" steam table
pans.
