This versatile Cres Cor 121-PH-UA-11D proofing and holding cabinet features an easy-to-read thermometer and simple controls that allow you to switch between holding and proofing modes at the flip of a switch. The holding function has a maximum temperature of 180 degrees Fahrenheit. The unit's proofing function has a temperature range of 80 to 95 degrees Fahrenheit, and provides 95% relative humidity to keep your products from drying out.
The Cres Cor 121-PH-UA-11D proofing and holding cabinet features 11 sets of universal style pan slides that can hold a variety of pan sizes on adjustable 1 1/2" centers. A clear Lexan door provides excellent product recognition while a perimeter door gasket minimizes heat loss.
Heavy duty 5" swivel casters, 2 with brakes, provide excellent mobility even when the Cres-Cor 121-PH-UA-11D holding and proofing cabinet is fully loaded. It requires a 120V electrical connection. A 6' power cord with NEMA 5-20P plug is included. Consult the Specification Sheet for additional details.
