Many gas equipment manufacturers need to make adjustments to the equipment so it operates correctly at elevations over 2,000 feet. Sometimes we can special order from the manufacturer and have your cooking equipment delivered ready-to-go, but in other cases, you’ll need to have a qualified service technician come to your location and alter your unit at the time of installation so that it is compatible with a higher elevation. How to Boil-Out a Deep Fryer

Watch this video to learn how to perform a boil-out to keep your fryer clean! Complete the procedure frequently to save your business valuable time and money.

As oil prices continue to rise, it's important to take advantage of products that allow you to use less oil. Using Frypowder filter aids and oil stabilizers can cut down on the amount of oil used, ultimately saving you time and money. But if you don't properly clean your fryer beforehand, it’s like throwing all that money down the drain! You should always start your fryer oil stabilizer regimen with a clean fryer that’s been boiled out to make sure all dirt and debris has been removed. Otherwise, you may have proteins, polar contaminants, and other matter that will start to contaminate the new oil immediately when added. That will break down the oil quicker, leaving you to change the oil more frequently and ultimately costing you more time and money! This video will show you the proper steps to ensure that your fryer is ready for use by using Noble Chemical Tempest Deep Fat Fryer Cleaner, a high temp fryer brush, and a fryer clean out rod. I will also show you how to safely discard your used oil once you have determined it is no longer usable. Noble Chemical Tempest Deep Fat Fryer Cleaner is easy to use and thoroughly eliminates all encrusted grease and grime. Just follow these simple steps! Drain all grease from the fryer and safely discard grease using an oil caddy and an approved used oil discard container. Use the fryer clean out rod to clean any remaining debris out of the drain line. Rinse the fryer with hot water to remove excess, un-drained fat. For a fryer holding approximately 30 lbs. of fats or oils, fill with cool water to within 3 to 4 inches of the top. Add 8 ounces of Tempest to the cold water. Boil slowly for 20 minutes. Use proportionately, using more or less depending upon the size of the fryer. After termination of boiling, allow the fryer to drain slowly and use a long handled, heavy duty brush to clean the sides, top, heating elements, and other parts of the fryer. Then rinse thoroughly to remove all residue. For future cleaning operations, less boiling time is required to perform this cleaning operation and the amount of Tempest used may be cut in half. If you find that your gas equipment isn't lighting or turning on properly, it could mean that the pilot light has gone out. This is a fairly common occurrence in busy commercial kitchens, particularly in high traffic areas or near frequently used doors. Follow these step-by-step instructions to learn how to relight a pilot light on some of the most common pieces of commercial kitchen equipment. As always, be sure to consult your owner's manual to ensure that you're using the manufacturer's instructions when preforming any type of maintenance on your equipment. If at any time you suspect that there is a gas leak in your facility or if you smell a very strong gas odor, call your gas provider immediately. Do not attempt to light a flame or turn on an electric switch until the problem is addressed. To light a range: Light the pilot with a lighter. To light an oven: Hold down the reset button and press the igniter a few times. To light a fryer: Turn the knob to pilot, press and hold the knob, and light the pilot. Continue to hold the knob for 30 seconds and then turn the knob to "on".

    We bought 2 of these fryers, they heat up quickly and maintain temperature well. Turn temp down between lunch and dinner if you have a down time to save on propane.

    Run of the mill fryer, works great if maintained well. If you have a little bit extra to spend I would go a step up, but if in a crunch will get the job done.

    Bought two of these to open a restaurant back in March '15. Had one warranty serviced with a new gas valve in May '15. The same one broke with the same problem again in July '15. Warranty work was perform and problem couldn't be fixed. Fryer was taken to repair shop and 2 week later, I was told by the warranty company that my fryer had a leak and they could not perform any more warranty service on it. How convenient for Entree warranty service. I was told that the fryer was dry fired and they had to red tag the fryer. These two Avantco equipment was not my first purchase, but will be my very last. Thank You Avantco and John at Entree for making it an easy decision to never buy your products again.

    This fryer started out working fine but in less than one year it is leaking. The Avantco won't honor the warranty since we are 9 days past a year on the purchase date even though their warranty manual says "From date of install" Stay away from this piece of crap.

    We purchased this seven months ago. The unit works as advertised. We make fresh cut French fries that are 3/8" cut. They take approximately five minutes to cook. We also make our own hand-breaded chicken fried steak. They take approximately four minutes to cook. I feel this is an excellent fryer for the price. I would recommend purchasing this brush http://www.webstaurantstore.com/carlisle-4011100-23-fryer-brush-with-l-tip-teflon-174-bristles/27140111.html because it is impossible to clean between the tubes without it.
