Any baker knows that yeast is an essential component in the process of baking bread. A leavening agent, yeast converts sugars found in dough into carbon dioxide. Active dry yeast has to be dissolved in warm water before it is added to the rest of an ingredient mixture. Instant dry yeast, on the other hand, does not need to be dissolved before it is used. Instant dry yeast is ground finer than active dry yeast, and is also known as "bread machine yeast."
