This results in evenly cooked products that meet safe internal temperatures. Foods will not dry out, thanks to a conveyor oven’s forced air technology. The forced, or impinged, air forms a membrane around food to retain moisture. It also allows you to yield higher amounts of finished products in less time and lower temperatures than convection ovens.
